Create Healthy Fried Snacks
Spiced Sweet Potato & Feta Fritters
(makes around 12)
Ingredients:
400g carrots
1 large potato
1 medium onion
300g sweet potatoes
Salt
3 medium eggs
100g feta, crumbled
3 tbsp wholemeal flour
Handful of fresh coriander,
chopped
1 tbsp cumin seeds
1/2 Halo cup vegetable oil
Directions:
Grate all the veg into a large colander over a bowl and sprinkle over a good pinch of salt. Leave for 30 minutes to allow excess liquid to drain.
Meanwhile, mix the eggs, feta, flour, coriander and cumin seeds in a bowl.
Squeeze the veg mix in the colander to remove as much liquid as possible and combine with the egg mix.
Add the oil to the Halo bowl, set the timer for 2 minutes and heat on the DUAL HEAT mode in the LEVEL position.
Using a handful of mix, form into balls and place into the Halo bowl. Press down lightly to flatten slightly.
Set the timer for 15 minutes and cook on the DUAL HEAT mode in the LEVEL POSITION.
